Nutrient availability in cooked vegetables

Andrea from MD asks: Does cooking a vegetable until it is soft, release more vitamins than crispy vegetables?


Answer


: Crispy vegetables retain more vitamins. The longer you cook vegetables, the more vitamins are either destroyed by heat or lost into the cooking water. When you eat, whether crispy or soft, your body is able to extract most of the vitamins. Thus, it is better not to overcook vegetables.
